A couple that I'm always surprised people don't know:

Command (Apple) + tab allows you to move among open applications.

Ctrl + tab allows you to move among live tabs in Firefox

Command + tilde switches open docs in Word

My favorite Mac shortcut is activated via turning on Zoom under Universal access. It allows me to press + to zoom in on the screen and - to zoom back out.

Very useful on the computer projector when teaching or to read tiny print in Google Reader.

THANK YOU for leaving a comment on my blog post "Did it...bought a Mac." I hadn't yet discovered the keyboard shortcut to zoom and there are many other things I learned from the tips you have posted on your blog. I'm having fun learning my way around on the Mac and your documented journey from PC to Mac will be very helpful!
