Matzeklöβsuppe for Pesach

In an effort to digitize my grandparents recipes in order to preserve them for my children and one day grandchildren, here is the recipe for my grandfather’s Matzeklöβsuppe (Matzeball Soup) for Pesach.

Ingredients:
- One packet of Matze
- 1 sauteed onion
- 2 egg yolks
- Salt, pepper, Ingwer, Muskat, chopped parsley
- Baking Powder
Directions:
Soak Matze in water until soft, then drain them through a colander.

Chop parsley


Add all the other ingredients and work into a dough.

Dry dough further by adding it to a pan (without grease or oil). Form into balls and cook for 10 minutes in soup.
